
For brunch this morning (eating at 11am because I slept in today) I was craving something warm and rich plus I love Tumeric which has many health properties. I hope you will enjoy this dish which is creamy, rich, delicious and good to the last spoonful.
Ingredients:
2 Cups of Water
1/3 Cup of Quick 5-minute Grits
1 tsp Ground Tumeric (or more to taste)
Butter to taste
1 tbl marscapone
1 egg over easy
1 strip of bacon cut in 1/2
1/4 avocado
sprinkle of chia seeds
Easy Steps:
You will want to have a whisk on hand and a top for your pot.
In a medium pot boil the water on high heat then add the quick grits whisking steadily while lowering the heat to medium. Whisking consistently will keep the grits from forming lumps.
While the grits are cooking you can start making the bacon, egg and slice the avocado. All of this cooking is just for garnish so it is optional to add it to your meal.
After the grits thicken (about 4-5 minute), keep the pot on the heat (they taste better if you cook a little past the 5 minutes). Now you can add in the butter to your taste as well as the Tumeric, adding less or more to your prefernce.
The grits should be creamy and smooth, not stiff. Make sure to taste it while you are cooking to see if they are the consistency you want before taking them off the heat.
Once they are ready, you will want to add in the marscapone while whisking til creamy and blended. (If your grits are stiff and not the texture you want, you can add 1/4 th cup of water as needed and keep cooking til they are just right)
Finally, everything is ready! Put the grits in a bowl, layer the bacon, avocado and fried egg, then sprinkle with chia seeds and enjoy. Soooo good!
