1 tablespoon of salted butter
Two pieces of sliced sourdough bread
thinly sliced manchego cheese for both slices
two handfuls of fresh spinach
Hot Sauce (Optional)
Lightly melt a little butter in a frying pan and toast bread then a little more for the other side reserving ½ the butter for the spinach.
Put toast on the plate then add the rest of the butter to the pan then saute the spinach. While the spinach is sauteing add the cheese to the bread and slice the avocado into 6-8 slices.
Once spinach is softened, add to cheese, then add avocado on top of spinach.
Hot Sauce or other sauce to taste. No salt is added because the butter is salted.
